Cherry Mojitos

You know the saying, "Don't go to the grocery store on an empty stomach"?

I have to admit, that's a wise rule.  But I also admit it's not one I adhere to 100% of the time.  And I can tell those times when I have gone to the store on an empty stomach, because when I start unloading my groceries I look at all the stuff I've come home with and wonder why in the world I even put that in my cart.

One thing, that I can never resist is fresh cherries.  It doesn't matter if I've just eaten or my stomach is turning inside out from hunger pains, I can't walk by the cherry display without popping a bag in my cart.  I think my grocery store knows my weakness too, because immediately when entering the store there's a huge display of fresh cherries that greet me.  I mean, I literally have to walk around them to get to the produce section.  So, without hesitation I snag a bag of those delicious juicy cherries, plop them in my cart and continue with my shopping.

Cherries are one of my all-time favorite fruits.  My mom couldn't keep them in stock.  She'd walk in with a bag and I'd snag them, head outside and devour those delicious bits of goodness.  My obsession with this little fruit hasn't weakened over the years, if anything it's only gotten stronger.  And, that love for cherries has definitely been passed down to my little guy.

BBQ Chicken Cobb Salad

It seems like as of late I've been sharing a lot.  And I mean A LOT of sweets.  Don't get me wrong, I love my sweets and baking, it's my therapy.  But, if you had never been to the blog before and started purusing the most recent recipes you'd think we lived on sugar, sugar and more sugar.

That couldn't be further from the truth, and honestly, I'm not sure why in the world I've shared so many sweet recipes back to back to back.  It wasn't planned, I promise!

So, to get things back in balance I'm sharing a non-sweet, non-dessert recipe with you today.  Finally!

What better way to get things back in balance than with a salad.  But not just any salad a Cobb salad.  I love a good Cobb salad.  But honestly, what's not to love; some meat, lettuce, eggs, and assorted other veggies all on a bed of crispy, crunch ice cold lettuce.   Yum!

Blueberry Mojitos

When I think summer I think warm sunny days, amazing sunsets, trips to the lake and beach and the list goes on.  Another thing that I get absolutely giddy about when the warmer weather starts rolling in is all the fresh fruits, berries, veggies and herbs.  Nothing beats them.

And some fresh berries and herbs in a cocktail.  Well, that's just downright amazing.

These particular mojitos were the ones that secured the fate of #MojitoMonday.  What's not to love about the combination of tart lime, sweet blueberry, fresh mint and a little sugar?  It's light, refreshing and slightly fizzy, just enough to tickle the tip of your nose when your indulging in it's gloriousness.
Gloriousness, is that even a word?  Oh, well.  At this point it doesn't even matter.  Because this blueberry mojito is glorious.

SRC: Frozen Nutella Hot Chocolate

During the winter months a tall cup of rich, thick hot cocoa is a necessity.  It's good for the soul and truly does help cure that frost bite.

Sometimes a hankering for that smooth, chocolate goodness arises in the summer.  But when it's 90 degrees pushing 1000 the last thing anyone wants to do is sip on some steaming cocoa.  Gosh, just the thought of that makes me miserable.

So, what do we do when we're in that predicament?  The predicament of wanting silky, rich hot chocolate when it's extremely hot outside.  Well, put it on ice, of course!

See, this month for Secret Recipe Club I was purusing Dorothy's blog, Shockingly Delicious and I was intrigued by oh, all of her recipes.  I mean, I didn't get through the first page without drooling.  Which, I should have been ready for since the happens every time I peruse her blog.  But, I scrolled through page after page of mouthwatering recipes, and when one of the pages popped up I saw a recipe for Nutella Hot Chocolate.  I went on and looked through other recipes, even referred to some of the ones I've bookmarked over time.  But the damage had already been done.  I was craving nutella hot chocolate, and something bad.

Salted Chocolate Chocolate Chip Cookie Dough Bars

Raise your hand if you're one of those people who could care less about cranking up the oven when you've got a bowl of cookie dough in your grips.  Because instead of wanting to scoop, bake, cool, remove and repeat, you just want to dive in that bowl, face first and indulge in the awesomeness that is cookie dough.

Um, right now my hands are waving frantically in the air.  So, yes, I'm definitely one of those people. And proud of it!

So, when I was given the request to create "something with cookie dough" from one of the members of the KARK4 morning crew I gladly rose to the occasion.  Challenge accepted!

I thought of and tested several different cookie dough recipes, but it wasn't until I made these bars that I knew I had a winner.  I mean, just when you thought it couldn't get any better than eating that cookie dough out of the bowl by the spoonfuls, it does.  How?  With these bars.

BTB: Homemade Peach Cobbler in a Jar

There are times when I get so caught up in making something new.  Something fun and exciting.  Some off the wall recipe that is so incredibly intriguing that it just draws me in, that I forget just how good simple can be.  Simple, basic recipes, a lot of which I grew up enjoying, are still some of the best recipes in my book.  Those are the ones that are still the most comforting to me.

I love the challenge of a super rich, indulgent chocolate cake, frosted with salted mocha buttercream.  I love slicing into a layer cake and seeing cake separated by amazing filling and it's all enveloped in a deliciously creamy frosting.  I so enjoy the challenge of new recipes that I've never heard of, that push the boundaries of my comfort zone immensely.
But, the past week, in preparation for Father's Day I've been focusing a little more on the classics and less on the off the wall, over the top treats.  We took suggestions from several of the KARK4 viewers.  We asked people to let us know what that special man in their life's favorite treat was.  We heard several answers, but the ones that we heard the most were down home, home style desserts.

Apple Crisps Cups

Fruit crisps are a classic.  Take some fruit, toss with some sugar and possibly some spices, throw them in a shallow dish, top with a streusel topping, bake and viola.  You've got a fruit crisp.  An easy, no-fuss dessert that is "dressed up" by adding a scoop of vanilla ice cream!

How awesome it that?

Sometimes you want to dress that simple dessert up just a tad, but still keep it easy.

S'mores Cheesecake Bars

So, I've never met a dessert I didn't like.

I've never met a s'more I didn't like.

And lastly, I've never met a cheesecake I didn't like.

So it's safe to say that I love sweets.  If it's dessert, sweet and involves sugar I'll probably, most definitely eat it!

This specific recipe is a dessert, involves s'mores and cheesecake.  But before we talk about the recipe at hand, I want to talk about cheesecake for a second.

Cheesecake.  I love it.  But what's not to love?  A crunchy crust that's the base to a perfectly tangy,
creamy, silky cheesecake.  Um, yum!  Drooling over them.  Eating them.  Well, that's the easy part.  What's not easy about cheesecake?  Well, the baking and resting part.

See, there's an art when it comes to making cheesecakes.  Full fat cream cheese, it's a must.  And it has to be at room temperature.  Another must, a water bath.  This allows the cheesecake to bake evenly and reduces the chance of splitting.  Baking and no peeking.  Then, the last crucial element is removing the cheesecake from the oven, placing it on a cooling rack and letting it sit for several hours and no touching allowed.

Pineapple Jalapeno Mojito

It's Monday!  So you know what that means.  It's #MojitoMonday!  This is the third Monday of this series and so far we've had strawberry mojitos and traditional mojitos; both of which are delicious!  So, up next we have a mojito that is sweet with just a hint of spice, pineapple jalapeno mojito.

Now I've had cocktails that involve peppers before and while I like the combination of sweet and spicy, some of them have been so spicy that they literally made my ears burn.  Honestly, that's really not what I classify as a beverage that is enjoyable.  I love the pepper taste, a touch of heat but I still want it to be refreshing and enjoyable.

Super Chewy Brown Butter Chocolate Chip Cookies

Folks, I have to apologize.  It seems like the past few weeks have been pure craziness; complete with late nights, running around like a chicken with my head cut of, and just complete and utter chaos.  In the midst of everything that has been going on, LL's has unfortunately taken a back seat.  I feel so bad and I'm kind of disappointed because I've got so any recipes that I'm so excited to share with you all and I haven't been able to get them to you.

Things seem to be settling down a bit.  This next week is going to be a little busy, but hopefully nothing like the past few weeks.  I've been able to carve out a little time and I was able to dedicate it to a few posts for you guys.  Hopefully things will be back on a regular schedule within the next week or so.

Since I'm not back into a normal routine yet I had to make the hard decision of just which recipe to share with you.  A beverage? Appetizer.  Main dish.  Or dessert.  Well, it was a hard decision but I finally came to the conclusion that y'all needed theses cookies.  And you needed them now.

BTB: Mojitos

Okay, so before we get too far into the #mojitoMonday series, I should probably go back and talk about the drink the started it all.  The original mojito.  Limes, mint, a little sugar, alcohol and a little soda water.  Simple, basic ingredients.  Right?  Right.

What's so special about them?  Well, how about when the limes, mint and sugar are muddled together it creates an amazing flavor combination.  One that's light, refreshing and oh-so-tasty.  All of the things I look for in an amazing cocktail.

Strawberry Mojitos

I am beyond excited about this new series I have for you this summer!

We've all heard of meatless Mondays, enjoying a meatless meal at least once a week.  It's a good practice and a great way to incorporate more veggies and grains into our diets.  It's something we try to do in our house; although I must admit we don't participate weekly.

Anywho.  So, we've heard of meatless Mondays, and those are great.  But what about Mojito Mondays?!?  What what!  I think this is a trend that most everyone can get behind.

Summer hasn't officially come, we still have a few weeks, but it's June 1st and I'm deeming it the unofficial, official start of summer.  We have 3 months of sun, sand, backyard bbqs, vacations, and lake fun ahead of us!  And we all know that when that warm, summer sun starts pounding down hard, we need a beverage to help us cool off.  What better cocktail to sip on during the dog days of summer than a Mojito?
