Chocolate Turkeys

Thanksgiving just wouldn't be Thanksgiving without turkey.  I mean, this bird is a vital part of the tradition.  Not only is it the center of all kid's art projects during this time of year but it's also the show stopping center piece on everyone's table. 
So needless to say these two legged, feathered friends are the mascot for this time of year.  But that juicy, white meat doesn't have to be the only type of turkey you enjoy this year.  What about turkey on your dessert table?  In honor of the glorious bird, I decided to make these candy corn feathered friends that have been seen floating all over the internet.

Cinnamon Hard Cider

Crisp, cool air, pumpkins, apples and apple cider are synonymous with this time of year.  Once I get the first hint of cool air my brain instantly starts to think about warm, cozy, comfort foods.  And one of the first flavor combinations that comes to mind is apples and cinnamon.  Any time I get a hint of the combination of sweet, crisp apples and warm cinnamon it just makes me feel all warm and cozy.
I love anything involving apples, so needless to say hard cider is one of my favorite drinks and has been for quite some time.  This first time I tried hard cider I tried the Woodchuck brand and I've been stuck on that until this year.  When I went to the store recently to pick up some cider they were out of my "go to" brand so I decided to branch out and try a new brand.  After I browsed through the ciders I finally decided to go with Angry Orchard.  And let me tell you, it was a decision that was well made.  I believe I may have found my new "brand of choice".

Apple Puff Pastry Tarts

I'm one of those people who doesn't mind spending extended periods of time in the kitchen making the perfect layer cake, a show stopping meal, or the most delicious bread.  It's where I find my joy and relaxation.  But there are times where I'm tired or need a dessert that doesn't call for a lot of mixing, folding or kneading.  In those times I still want to present a dessert that's not only delicious but appealing to the eyes. 
Well, this apple tart takes care of both of those.  This is a dessert that requires very few ingredients and even less tools, and it's ready is under 30 minutes.  In under 30 minutes you'll have delicious and show stopping tarts that will impress anyone that sets their eyes on them.

Sweet Potato Tartelettes

 
When I think about the spread on Thanksgiving there are a few staples that come to mind.  There's the turkey, which is the centerpiece of the whole meal.  Because what is Thanksgiving without the bird?  Then there's the supporting characters; green bean casserole, mashed potatoes, rolls of some sort and the infamous sweet potato casserole. 
Sweet potato casserole.  This is the casserole that causes much debate.  Some people love it and Thanksgiving just wouldn't be Thanksgiving without it.  Others despise it and don't even want it in their site.  Then there's the whole with or without marshmallow debacle.  I believe the sweet potato casserole lovers of the world are divided when it comes to this.

Pumpkin Cheesecake Dip

Is pumpkin your thing?  What about cheesecake?  Well then, what about pumpkin cheesecake?  If you answered yes to any or all of the above questions then this is the dessert for you.  Pumpkin cheesecake dip.  Oh yes, it's every bit as good as it sounds but with have of the work of cheesecake.  All the goodness of cheesecake with half the work?  Too good to be true?  Absolutely not! 
Let me tell you, this dip is nothing short of amazing.  But I mean look at what we are talking about, pumpkin cheesecake dip.  How could it be anything but incredible?  You know me and my pumpkin, I'm a fan to say the least.  And this dip, well, this dip has everything I expect from a good pumpkin dessert...and then some.
It's full of pumpkin flavor and all the warm spices you expect from any good fall dessert; cinnamon, pumpkin pie spice, and brown sugar.  It's light, fluffy, and creamy, so easy to make and comes together in no time.  There's no baking involved, making the a perfect option for a dessert that needs to be whipped up for a last minute get together.  All the things that a good dessert is made of.  
To garnish this dip I topped it with a sprinkle of cinnamon and some graham cracker crumbs.  You could also top it with chopped pecans, chocolate chips or white chocolate chips.  I served it with Stacy's pound cake crisps, but apples, pretzels, vanilla wafers or graham crackers would be delish as well.  This dip would be the perfect pre-feast snack at your Thanksgiving gathering or any festivities going on throughout the holiday season!

Pumpkin Cheesecake Dip
Ingredients:

1 Stick (8oz) cream cheese, room temperature
3 Tbsp brown sugar
2 Tbsp powdered sugar
2 Tbsp white sugar
1/4 Cup pumpkin puree
1/2 Tsp ground cinnamon
1 Tsp pumpkin pie spice
1/2 Cup heavy whipping cream

Directions:

Place cream cheese in a medium mixing bowl along with the brown sugar and powdered sugar.  Beat on high until light and fluffy and sugar is completely combined with the cream cheese.  Add the pumpkin puree, cinnamon and pumpkin pie spice and beat on medium until incorporated.

Place the heavy whipping cream in a medium bowl and beat on high until mixture begins to thicken, about 2 minutes.  Add the granulated sugar and beat on high until peaks begin to form and the texture resembles whipped cream.  Add the whipped cream in the cream cheese mixture and gently fold until combine.

Transfer to a serving dish.  Top with crumbled graham crackers and cinnamon.  Serve with pretzels, graham crackers, or pound cake.

Whipped Pumpkin Butter

Whipped butter is one of the best things on the planet.  There's just something so surreal about dipping your knife into that light, creamy goodness and spreading it on a hot piece of toast, warm biscuit and fresh roll straight from the oven.  It's something so little that makes my day.  Have you tried the goodness of whipped butter?
Since we're in pumpkin season and baking up all things fall and pumpkin I thought it only necassary to make a spread that was worthy of adorning those baked goods.  Something that was full of fall flavor that would compliment the flavors of the goodies without overpowering it.  Then my mind went to the simple thing; the whipped butter.  The thing, in my opinion, that adds so much without taking over the flavor.

Stuffed Acorn Squash

Fall is all around us; the changing leaves, cool air and endless amounts of pumpkins everywhere.  With fall comes many different types and varieties of food.  I love looking through the produce section and seeing all the different varieties of pumpkins, squash and various other gords.  There are squash and gords of all different shapes, sizes and colors.  Not only do these things scream fall and make good décor, but the options for recipes are endless.  Roasted, sautéed, boiled, steamed, soup; the options go on and on.
Squash is such a simple item to work with, the flavor of the squash alone is delicious and really doesn't require a lot of extras to get the full flavor.  I've enjoyed my fare share of plain ol' roasted squash with a touch of salt and pepper and I've been beyond satisfied.  But there are times where I do like to add a little more to really enhance the flavor and presentation of a dish.  So when I was at the store recently I stocked up on a few varieties of squash and my intentions were to jazz them up.

Butter Pecan Cupcakes

If you are from the south then you are probably aware that today is opening day of modern gun season.  Hunters have been preparing and waiting for this day for weeks, and some even months.  This morning people woke up before the crack of dawn, dressed in their camo and hunter's orange and made their way to their stands and waited patiently for the big one to cross their paths.  What does all this have to do with Butter Pecan Cupcakes you ask?  Well, I'll tell you.
One of my co-worker's boyfriends is an avid hunter and his birthday was today.  She wanted to surprise him with a birthday cake, but not just any cake, a cake that was personalized to one of his passions.  So she found it only fitting to give him a cake that was inspired by the season.  After we visited about it for a while we finally decided on a deer cake.  A cake that was reminiscent of a deer mount.  Perfect, right?
So once we decided on the type of cake we started talking flavors.  He's not a chocolate fan, so anything involving chocolate was out.  I asked what some of his favorite desserts were and she threw out a few options and then said something about butter pecan ice cream.  When I heard that my mind zoned in on those flavors.  I threw out the option of a butter cake with a maple butter frosting, topped with chopped pecans and a caramel drizzle.  That was it; the design was final and now the flavor was.

Cheddar, Apple and Bacon Sliders

When I think of breakfast foods some of the first things that come to mind are bacon, biscuits, sometimes cheese biscuits, and eggs.  It seems like every breakfast is comprised of at least one of these items if not all of them.  While I love those big breakfasts complete with bacon, eggs, and waffles or biscuits sometimes those aren't always on the agenda.
Life comes calling, the morning rush is in full swing and there's no time to cook a complete breakfast, let alone sit down and enjoy one.  I have a feeling all of you are shaking your heads in complete agreement right about now.  But on those ever so hectic days you still want to prepare a meal for your family to enjoy and to fill their bellies before they head out the door.

Chocolate Gravy

The first time I was introduced to the goodness that is chocolate gravy was when I was in college.  We were having a potluck at work; some people brought breakfast and others brought lunch so we were set for the day!  One of the ladies walked in with a tray of biscuits and a pot of this chocolaty goodness.
You know me and chocolate, so my eyes instantly zoomed in on the pot.  I was thoroughly intrigued.  Was this hot chocolate, something to drink or something to serve over biscuits.  My eyes were glued to that big ol' pan.  I finally got the chance to ask what it was and then the words flowed out of her mouth like music to my ears, "well, it's chocolate gravy, of course"!  That's all I needed to hear.
I got one biscuit, opened it up and then scooped up a heafty amount of that gravy and doused my biscuit in it.  I devoured it insanely fast.  So then, you guessed it, I made myself another one.  This time making sure to not inhale it, but to take time to enjoy it.

10 Comfort Foods Perfect for Fall

November is here, can you believe it?  Where has the year gone?  The weather here has been all over the place but I believe the fall weather is here to stay.  When that first hint of the crisp air finally arrives I instantly start craving cozy comfort foods; pasta, soups, stews, chili and the list goes on and on.  So in the spirit of fall I've decided to share some perfectly comforting foods that are perfect for this time of year!

Apple Cake with Brown Butter Frosting- The smell of apples and cinnamon really bring the sense of fall home.  I love the combination of those smells and I love that combination in baked goods.  This apple cake not only has applesauce in the batter but has chunks of apples throughout the cake.  The addition of brown sugar, cinnamon and nutmeg truly ring in those fall flavors.  This deliciously moist cake is then topped with the ultimate of frostings, brown butter frosting.  The brown butter lends a slight nuttiness to the dish and compliments the warm apple cake perfeclty. 

Bean and Cheese Burritos- Burritos may not be on the top of everyone's list of comfort food, and typically they wouldn't be on mine.  But growing up my Grandma always had some of those frozen bean burritos on hand and if I was hungry she would whip one up for me in a flash.  So to me there's just something so comforting about creamy beans combined with tons of gooey melty cheese.  It's a meal that comes together in very little time and is so comforting.  Pair these with a side of jalapeno cream cheese rice and you've got a simple meal that is very satisfying. 

Buffalo Chicken Twice Baked Potatoes- Baked potatoes are one of my favorite foods.  I could take a potato add a little butter, some cheese and salt and pepper and make that my meal.  But I also love to play with my food and add different ingredients to twist things up from time to time.  That's what I did with these buffalo chicken twice baked potatoes; I took my love for potatoes and my love for hot wings and combined them in what you see here.  A potato loaded with chicken, hot sauce, cheddar and blue cheese and topped with a drizzle of ranch.  Um, yum!  Add a green salad and maybe some mixed fruit and you've got a perfectly simple and delicious meal!

Cheesy Jalapeno Corn Chowder- Corn chowder is a classic.  But this particular corn chowder is amped up with the addition of tons of cheese, bacon, potatoes and jalapeno.  Now if that doesn't sound tempting I don't know what does!  This chowder is big on flavor and takes very little time to prepare.  In a matter of about 40 minutes you've got a comforting chowder this is cozy, big in flavor and fulfilling!

Classic Baked Macaroni and Cheese-Bacon Lover's Style- Macaroni and cheese is the epitome of comfort food.  There's just something about starchy pasta coated with tons of cheese that will make even the worst day better.  Now add tons of crispy, salty bacon to the mix and you've got the ultimate macaroni and cheese that is perfect for that bacon lover in your life.  Make a simple salad to enjoy on the side and you've got a perfect cozy meal.

Crock pot, Sausage,Peppers, and Onions- Practically any meal that can be made in a crock pot is comfort food.  There's something about food cooking slowly all day that screams comfort, not to mention the aroma that fills your house throughout the cooking process.  This dish is packed full of sausage, peppers, onions, garlic, wine and chicken broth.  The end result is tender veggies and juicy meat that goes on top of a bed of rice, hoagie bun or pasta perfectly.

Loaded Baked Potato Soup- I have a weakness for big ol' baked potatoes piled high with butter, cheese, bacon and sour cream.  They are delicious and there's just something so comforting about them.  This loaded baked potato soup takes all the goodness of a loaded baked potato and puts it in a hearty, creamy soup.  Serve it in a bread bowl or with a loaf of crusty bread and you're set!

Roasted Poblano Beef Stew- There is nothing more comforting than a big bowl of stew on a coo day.  This stew is one of my favorites packed with chunks of seared chuck roast, roasted pepers, mushrooms, potatoes and a variety of spices.  The flavors are complex; smoky, spicy, but brightened by the fresh cilantro.  Serve this with a glass of red and some crusty bread and you've got an amazing dinner!

Salted Caramel Apple Monkey Bread- Crisp apples paired with brown sugar and cinnamon. Now that's a classic combination that is so comforting and the perfect aroma to cut through the crisp fall morning air. This salted caramel apple monkey bread is a delicious fall twist on the classic monkey bread. Each piece of dough is filled with apples that have been tossed in brown sugar, sugar and cinammon. The bread is then tossed in another coating of cinnamon and brown sugar and that develops a deliciously sticky coating while baking. All of that is then topped off with drizzled caramel and a pinch of sea salt. This is the thing to wake up to in the mornings!


 Slow Cooker Maple and Brown Sugar Pork Tenderloin- A juicy pork tenderloin cooked slowly in a combination of maple syrup and brown sugar.  Those flavors not only evident on the outside of the meat but they penetrate through the meat entirely.  Then there's the gravy; it's incredibly simple but bursting with flavor.  It's the juices that are rendered throughout the cooking process and a portion of the onions that are cooked with the meat and those are pureed together and provide a gravy that is bursting with flavor...and that would be a perfect base for a delicious soup.
