DB: Empanada Gallega

Patri of the blog, Asi Son Los Cosas, was our September 2012 Daring Bakers’ hostess and she decided to tempt us with one of her family’s favorite recipes for Empanadas! We were given two dough recipes to choose from and encouraged to fill our Empanadas as creatively as we wished!

I had a blast with this challenge.  This time the filling I used was just a basic ham and cheese mixture but it was delicious.  It was like a hot, gooey ham sandwich encased in a flaky and delicious pastry.  There are so many options for fillings, both sweet and savory, I can't wait to make more.  For this challange I made a large empanada but these would be perfect made into individual, smaller empanadas.  The individual empanadas would be perfect for parties or gatherings and easily customizable to suit any taste, as well as have a variety of options for your guests!

Chicken and Basil Stuffed Twice Baked Potatoes

Twice baked potatoes is one of my all time favorites, it's one of those dishes that never seems to gets old.  While I love just the classic twice baked potato this loaded with cheese, I mean what's not to love about a good potato and tons of gooey melted cheese?  I do enjoy trying new spins on this classic to changes things up a bit.  When I came across this recipe on Jessica's blog I knew this would be a delicious twist on a great classic.

Cookies and Cream Cake


So this past weekend we celebrated Spencer's birthday and I simply could not pass up the opportunity to make him a cake.  Because we all know that it's not truly a birthday without cake!  I can't even begin to tell you how many ideas I had for his cake, but I know it was A LOT.  To help narrow my options down, slightly, I had to determine if Spencer was in the mood for chocolate or something else particular.  Once I got that nailed down I then had the daunting task of deciding which chocolate concoction to make!  That was the hard part.

I searched threw all of my recipes I've compiled over time trying to seed out the ones that just didn't fit and narrow it down to the ones that I thought would be perfect.  I sent Spencer one recipe and idea after another, and then I found it.  Yes, IT!  I found this recipe on Butter and that was it.  My search was over...for now!  Spencer decided on a cookies and cream cake for his birthday.  Now let me tell you, he was really excited about this cake but, honestly, I think I was even more excited!

Cheeseburger Pizza

Okay, I think I know what you are thinking.  Cheeseburger pizza?  Really?  But before you click away let me plead my case.  If you are skeptical of this pizza you are exactly like Spencer.  He's never been a fan of cheeseburger pizza.  Not sure why because he loves cheeseburgers and he loves pizza, but he's not a fan of the two of them together.  Well, let me correct myself.  He wasn't a fan of the combination...until now.  If you're like me then you love cheeseburgers, you love pizza and even the thought of them sounds amazing!

Southwestern Pasta Salad with Creamy Avocado Dressing


The pumpkin is out and fall recipes are all around us.  I love fall and all the things that come with it but I'm not quite ready...yet!  We are still getting tomatoes, jalapenos and bell peppers from our garden.  Yes.  Still!  So I'm still taking advantage of every. last. fresh vegetable I can. 

That's why I'm so excited to share this pasta salad recipe with you.  It's packed full of fresh vegetables, and ours utilized vegetables straight from our garden.  I think about 95% of the vegetables used were from our garden.  We used tomatoes, red onion, red and green bell peppers, and corn!  Talk about straight from the farmer's hand.  There's nothing better!

Tortellini Spinach Bake in Creamy Lemon Sauce

Fall is rapidly approaching and with that crisp, cool weather also comes all that delicious and filling food.  Comfort food and fall easily go hand in hand.  When I think of comfort foods one of the first things my mind automatically goes to is starchy goodness, like pasta.  I love noodles, shells, and stuffed pasta for so many reasons.  First, because they are incredibly delicious.  They are a blank canvas waiting to soak up any sauce you add or any soup you spoon over it.  Secondly, they are incredibly easy to incorporate into any meal and it takes little to no time to cook.
