Mushroom-Sausage Ragu

It's not surprising that I love being in the kitchen.  Some people have their retail therapy, others get massages and manicures, but I cook and bake.  The entire process; preparation, cooking and decorating and plating is my therapy.  As much as I enjoy preparing meals that are packed full of different steps and processes, during the week I just don't have that kind of time.  I need to be able to get a well balanced meal on the table in a short period of time so we can eat at a decent hour.

DB: Challah Bread

Making bread is a process that honestly never ceases to amaze me.  Honestly, there is truly something magical about combining a few simple ingredients and watching it transform to a fluffy, light, buttery bread.  As much as I love bread of any sort, there is just something about homemade bread that takes it to another level.  I enjoy the process, controling the quality of ingredients and of course, getting to enjoy the end product fresh from the oven.

SRC: 3 Ingredient Ice Cream-With Brownies and Caramel

Today is another reveal day for the secret recipe club.  This is only my third round, but I thoroughly look forward to every month's blog assignment.  I am constantly introduced to new blogs that are packed full of recipes that look and sound absolutely amazing.  This month I was given Kelli's blog, Ambition's Kitchen.  This actually wasn't the first time for me to come across her blog; Kelli had my blog for a previous round and I was captivated by her blog, pictures, and recipes.  While looking through her blog last time I found quite a few recipes that I knew I needed to make, and she's kept the delicious recipes coming.  Let me just start by saying Kelli sounds like a woman after my own heart; she's all about family and delicious food.

Thick and Chocolatey Brownies

It's no mystery how I feel about chocolate.  To say I love it would be an understatement, at the least.  Now, you probably also know how I feel about brownies and that my favorite type of brownies are those ooey, gooey, chocolatey, stick-to-your-teeth kind.  If you need to read an in-depth recap of my love and fondness of this type of brownie, here it is.  Now, if you just want to move onto the good stuff I promise I won't deter you much longer.

Crispy Oven Chicken Tenders

I believe chicken tenders are a staple in every 2 year old's diet and Tucker is no exception.  Although his he has a very mature palette for his age, and he eats a multitude of different foods chicken tenders are hands down one of his favorites.  They are my "go to" for him when he shows absolutely no interest in any of the options I give him.  You know, we all have those days where nothing sounds good, right?  Well our kiddos are no different.

Summer is unofficially, officially here.  We have been experiencing record high temperatures, already.  Since we haven't even hit the primetime for extreme temperatures and heatwaves, I'm somewhat leary to see what's in store.  Oh well, I guess that just means my ice cream maker will be getting a real workout this summer!

Devil's Food Cake with Chocolate Frosting

Putting it quite simply, this cake is a chocoholic's dream come true.  Devil's Food Cake, where have you been all my life?  I've tried various chocolate cake/cupcake recipes and none have compared to the pure chocolate goodness that is devil's food cake.  Don't get me wrong, they've all been good.  I mean, they were chocolate, of course.  But this cake trumps them all, if I do say so.

Spicy Sausage Casserole

If you were to write a play by play of your weeknight routine what would it look like?  Here's a glimpse into my typical routine, it can get quite hectic.  After work I trudge through rush hour traffic, pick up my cute little man, then tolerate more rush hour traffic and finally make my way to my house.  Once I get home the race is on; it's time to play, prepare supper, feed my family, get Tucker ready for bed, relax for a minute (maybe) and then get myself in bed.  Can you relate?

Bean and Cheese Burritos

When I was younger my Grandma would always have an afternoon snack of some sort ready for me once I got out of school.  One of my favorites was bean burritos.  It was pure goodness with creamy beans and gobs of cheese.  It's been quite some time since I prepared one of those bean burritos for myself but they still hold a special place in my heart.  When I came across this recipe for bean burritos on Josie's blog all those memories of that wonderful afternoon snack rushed back.  Her description of her bean burritos sounded exactly like the one's my Grandma had made me countless times.  It didn't take long at all to determine that I needed HAD to make these very soon!  Once I discovered them I actually put the on the menu for the next week.

Fudgy Brownies

Let's talk brownies for a second, shall we?  What type of brownie person are you?  Do you enjoy brownies that are more cake-like?  Or do you prefer brownies that are ooey, gooey, fudgy and chewy?  I am a fudgy brownie girl, myself.  I love sinking my teeth into a fresh-from-the-oven, chewy brownie.  There is just something about it that is so deliciously satisfying.  The brownie is warm, gooey, fudgy, and full of rich chocolate goodness.  Is there really anything better?

Homemade Blue Cheese Dressing

I am a ranch girl through and through; but lately I've been enjoying blue cheese dressing as my dip of choice when I have hot wings.  I'm slowly growing to enjoy it on certain salads, as well.  I have noticed a pattern with bottled dressings versus homemade or those enjoyed in a restaurant; I just really don't care for bottled dressings.  I'm not sure what it is about those bottled dressings but they just lose something; I'm guessing it's the added preservatives to expand the shelf life that make the difference?  Again, just guessing but that's what I'm going with!  So, since I'm not a fan of most bottled dressings I make my own at home.  And, since my palate has matured and I enjoy blue cheese not only in various dishes but as a dressing I thought it was about time to make my own blue cheese dressing.

Jalapeno-Cream Cheese Rice

I am so excited to share this recipe with you!  This particular recipe has been a long time coming.  I know, I know, you're thinking a little rice, cheese and few other ingredients; what's so special about that?  Well, it's so special because it's so delicious.  I was first introduced to this side when I visited a local restaurant and had their shrimp enchiladas that was paired with garlic-jalapeno black beans and this deliciously rich, creamy and cheesy jalapeno-cream cheese rice.

Grilled Chicken and Spinach Salad with Spicy Pineapple Dressing

Salads have to be one of my favorite foods.  First, and foremost, they are delicious.  They are light, healthy and can be topped and adorned to fit any taste.  Even the tastes of the pickiest eaters.  They can even quench the hunger of those "meat and potatoes" guys, aka my husband.  Although, I can have a salad filled with plenty of vegetables, and sometimes, fruit, Spencer needs a little more heartiness to bed of veggies.  So to give him the same healthy benefits of a salad with a little more heartiness, we'll typically add a grilled chicken breast.
